This paper analyses the diffusion of Latin texts on dietetics in the therapeutic, didactic and informative aspects throughout the Middle Ages. The paper deals with the main genre characteristics and studies the contents and contexts of the production of the codices where this literature is kept and analyses the diffusion of these texts, as well as their audience. Among the informative and practical medical texts the regimina sanitaris and the consilia stand out; the former are usually devoted to noblemen, whilst the latter contain medical knowledge expressed in epistolary form. These works were transmitted in codices with diverse contents, sometimes independently, accompanied by other medical works of practical character, or even by literary or moral texts which created manuals in which body care completed moral edification. The paper also focuses on the privileged audience of these informative works of medical knowledge: medieval kings and princes, aristocrats, people linked to episcopal chanceries or universities, the bourgeoisie and, to a lesser extent, other professionals of medicine.
